Moroccan breakfast is one of the most naturally plant-based morning tables in the world. Bread, pancakes, olive oil, pulses, nuts, syrup and fruit — the dairy and eggs came later, mostly with hotel buffets. This guide walks through the traditional Moroccan vegan breakfast foods you will meet in Marrakech, what each one tastes like, and how to make sure your plate stays fully vegan.

Breads and pancakes

Msemen

Laminated square pancakes, folded several times and cooked on a flat pan. Traditionally brushed with butter; made with olive oil they are just as flaky and completely vegan. Eat them plain, with amlou, or with jam.

Baghrir

The “thousand-hole” semolina pancake, spongy and light, made from semolina, flour, yeast and water — vegan as it stands. It is usually served swimming in butter and honey, so ask for olive oil and date or agave syrup instead.

Khobz and harcha

Khobz is the round everyday bread that accompanies every Moroccan meal; harcha is a semolina griddle cake with a sandy crust. Harcha often contains butter, so it is worth asking — ours is made plant-based.

Spreads, oils and sweet things

  • Amlou — roasted almonds, argan oil and date syrup blended into a rich spread. Argan oil is a speciality of southern Morocco and one of the best things you can bring home.
  • Olive oil and olives — the simplest Moroccan breakfast of all: bread dipped in good local oil.
  • Homemade jams — orange, fig or apricot, often cooked without refined sugar.
  • Dates and dried fruit — Medjool dates, figs and apricots, especially in winter.

Warm dishes for cool mornings

Marrakech mornings can be cold from November to March, and Moroccan breakfast answers that with soup:

  • Bissara — split-pea or fava bean purée, finished with olive oil, cumin and paprika. Naturally vegan, cheap, and deeply satisfying.
  • Herbel — a barley porridge traditionally cooked with milk; delicious made with almond or oat milk.
  • Sfenj — Moroccan doughnuts fried in oil, usually vegan, sold from street stalls in the morning.

Drinks

Mint tea, of course — green tea with a fistful of fresh mint, sweetened to taste. Fresh orange juice from Jemaa el-Fnaa is famous for good reason, and Moroccan coffee (nous-nous when made with milk) can be prepared with plant milk on request.

Three ingredients turn a vegan Moroccan breakfast non-vegan: butter (including smen), honey and eggs. In a café, say “bla zebda, bla ‘assal, bla bid” — without butter, without honey, without eggs — and most kitchens will happily adapt, because the base recipes never needed them.
