What you cook in the class

The menu follows everyday Moroccan home cooking, which is built on vegetables, pulses, olive oil, bread and spices. A typical class includes:

  • Zaalouk – smoky grilled aubergine and tomato salad with garlic, cumin and paprika.
  • Taktouka – roasted pepper and tomato salad, a classic of Moroccan tables.
  • Moroccan lentils – slow-cooked with tomato, onion and spices.
  • Seasonal vegetable tagine – steamed with olive oil and spices, without any meat or chicken stock.
  • Msemen – flaky folded Moroccan pancakes made with olive oil instead of butter.
  • Moroccan mint tea – how to brew and pour it the traditional way.

Why choose a fully vegan cooking class in Marrakech

Many cooking classes in Marrakech can “make it vegetarian”, but vegetable tagines and couscous are often prepared with smen (aged butter) or meat stock, and pastries are brushed with honey or butter. In our class there is nothing to check: every ingredient is plant-based, so vegans can relax, ask questions and simply enjoy cooking.

You also learn the small details that make the food taste Moroccan – how to balance cumin, paprika and ginger, how to layer a tagine so the vegetables steam instead of boil, and how to fold msemen so it turns out flaky.
