What to watch out for when ordering vegan in Marrakech
Traditional kitchens are welcoming, but three ingredients catch out plant-based travellers:
- Smen — fermented butter, often stirred into couscous and tagines.
- Meat or chicken stock — used for steaming couscous even when the dish looks vegetarian.
- Honey — common on pancakes, pastries and in some salad dressings.
A useful phrase: “bla lham, bla zebda, bla ‘assal” — without meat, without butter, without honey. Everything we cook is fully plant-based, so you never have to negotiate.
